Hi, I’m Becs. And I cook a lot. I’ve always enjoyed cooking but the (relatively) new addition of our weekly veg box has meant that I’m cooking more than ever and needing to get a lot more creative with my recipes. Each week brings another seasonal challenge and a battle to use all the vegetables before the next batch arrives.
Almost everything I create has vegetables at the core. My partner and I are pescatarians but are eating more and more vegetarian/vegan dishes. And since we signed up to our veg box, I also realised that it’s not that easy to find vegetable-based recipes. Vegetarian or vegan “substitute” style recipes are in vast supply, but vegetable centred dishes are a lot more tricky to find. Yotam Ottolenghi’s Plenty recipe book was really the only one I could find – I would recommend it by the way.
I’m mainly creating this blog as a central place to store the recipes I love, the ones I tweak and tailor and the ones I’ve made up along the way. To make my life easier. But given the challenge around finding seasonal vegetable recipes, maybe it will help other people too.
